Italian abbacchio or agnellino is baby milk-fed lamb that is no more than 40 days old. It is much smaller and tenderer than American lamb and has a delicate sweet flavor. Use organically raised lamb between the ages of 6 months and 1 year, if you can find it; if not, regular lamb will work fine. Cut it into cubes that are the size of an espresso cup or a little smaller, says Teresa Stoppoloni, from the little town of Cingoli in Le Marche.
