Laura Mansi Salom offers another extravaganza from the aristocracy of Lucca. Optional, although highly recommended, is the addition of mozzarella that is diced and mixed into the meat mixture just before baking. Then, at the end, it is all soft and pulls into strings. The baking should not take longer than 30 minutes; it is only meant to heat the dish since all the component parts are already cooked.
