Eggs poached in tomato sauce are also known as uova in purgatorio, “eggs in purgatory,” perhaps because the red of the tomato sauce is reminiscent of the flames of hell, a potential final destination, or perhaps because eggs in purgatory aren’t as hot as uova al diavolo, “eggs the devil’s way,” which are made with the bite of hot peppers. Regardless of your theological leanings, this is an extremely easy dish to prepare when you look in the cupboard and find it is bare.
