Adele Rondini tosses this salad together in a flash and improvises if she’s missing an ingredient. She says you should do the same. Don’t have anchovies? Skip them. Can’t find arugula? Substitute a few sprigs of finely chopped flat-leaf parsley with a handful of basil leaves and toss in an extremely finely sliced clove of garlic. I’ve also mashed two anchovies and mixed them right in with the olive oil, vinegar, and pepper, although I was careful to use the sea salt sparingly.
