Watching Giovanna Passannanti make her exceptional tomato sauce was a revelation. She commented in a very off-hand manner: “I cook with my nose. The minute you smell the garlic, use it.” She always sets a lid slightly ajar over the mixture as it simmers and always presses the tomatoes through a food mill or sieve to remove the skin and seeds, which may be bitter.
