Chiu Chow dessert noodles

The Chiu Chow people live near the coast in the Province of Guangdong. While their food shares many of the subtleties of the Cantonese, flavours are often punched up with sharp, vinegary dipping sauces. Even their famous dessert noodles are given a good, solid kick along with the addition of a little red vinegar. This wonderfully simple dish is sweet and sour in its most sublime form.
