A Chinese chef once told me that when a Chinese diner drops a glass at a banquet, that person would never say, ‘Oops, I dropped a glass.’ Instead, they would say, ‘It falls like an opening blossom, rich and noble.’ The Sichuanese have an equally poetic way with food. This dish can actually look like ants climbing trees, especially if you drink enough mui kwe lu rose wine.
