The name of this dish translates as ‘pole carrying noodles’, referring to the shoulder poles that noodle sellers use to carry their edible wares. These days, the good people of Sichuan are more likely to eat this distinctively different, sweet, spicy, nutty dish in specialist dan dan noodle shops. It’s hard to say who is going to like this dish more: noodle freaks or peanut butter addicts.
