Ingredients: ½ cup bamboo shoots, cut into matchsticks; 2 tbsp dark soy sauce; ½ cup lotus seeds or gingko nuts (available canned); ½ onion, finely diced; 2 lup cheong sausages, thinly sliced; 6 dried shiitake mushrooms, soaked for 30 minutes; 2 tbsp peanut oil; 1 cooked chicken thigh, cut into thin strips; 1 tsp salt; 100 g (3 oz) char sieu (red roast pork), cut into thin strips; ½ tsp five spice powder; 2 tsp sesame oil; 1 tbsp shaohsing rice wine; 1 tsp cornflour; 1 cup chicken stock; 300 g (11 oz) dried wheat noodles; 2 spring onions, green part only, finely sliced; 3 tbsp dried shrimp, soaked for 30 minutes

To the Chinese, eight is a significant and lucky number because the word for eight sounds very much like the word for prosperous. For this reason, celebratory banquets will often officially consist of eight courses (even if a few extras are thrown in for good measure). In Chinese cooking, there is eight treasure duck, eight treasure chicken and eight treasure rice, but as far as 1 know, there have been no eight treasure noodles, until now.
