An exceptionally refreshing summer dish, this is the zen of cold noodles in a single bowl – pared-back, subtle, yet with intriguing and satisfying layers of flavour. Resist the temptation to overcook the noodles, as they need to retain an almost al dente bite to keep up the diner’s interest.
