A zaru is a bamboo basket or slatted bamboo box. Originally, soba were made entirely from buckwheat and were susceptible to breaking, so they were normally steamed then served in the zaru. These days, with the addition of wheat flour, soba are strong enough to withstand boiling. Nevertheless, they are still served in the traditional zaru.
