Thai people are particularly fond of fresh rice noodles and incorporate them into a number of truly original dishes. Yet for some strange reason, very few of these dishes ever seem to make it out of Thailand. Unusually gentle in its spicing, this homely noodle dish lets the textures do the talking, playing off the soft silky feel of the noodle against the crisp crunch of lettuce leaves and bean sprouts.
