I was first taught this recipe by the very urbane Chalie Amatyakul, who started the esteemed Hotel Oriental Thai Cooking School in Bangkok. Looking like miniature balls of knitting yarn, these wrapped meatballs can be a lot of fun to make, as long as you realise that you don’t have to be absolutely perfect with your wrapping.
