The real secret of this wonderfully refreshing summer salad is the dried shrimp powder, which imbues the whole thing with what I can only describe as an enchanting Thai accent. It’s a good idea to keep a small electric coffee grinder just for grinding your spices, but never use the one you use for your coffee beans. A quick whiz, and you have instant shrimp powder.
