Sift flour onto a wooden or marble surface and make a well in the centre. Add eggs, salt, oil and water and, with the tips of your fingers, start to draw the flour into the wet ingredients. Keep mixing, slowly tumbling the flour into the liquid until a rough, crumbly mixture is formed. Keep on working until a rough dough ball forms.
