Chinese chicken stock

• 2 kg (4½ lb) chicken bones, necks, wings, feet, etc.

Wash bones well in cold water, then place in a pot with 3 to 3.5 litres (5½ to 6 pts) of water. Add ham, spring onions, ginger and onion, and bring to the boil. Skim off the froth that forms on the s
