Ingredients

  • 1 cup peanut oil
  • 3 tbsp dried red chillies, crushed
  • 1 teaspoon

Method

Heat oil in a wok until almost smoking, then turn off heat. Add chilli and peppercorns and leave to cool. Strain through muslin or a fine sieve into a screw-top bottle and store in a cool, dark place.
