Ingredients

  • 1 litre (2 pts) cold water
  • piece of konbu (kelp) 7.5 cm<

Method

Put water in a pot, add konbu and heat. Just before water begins to boil, remove kelp and add bonito flakes. Bring back to the boil, then instantly remove pot from heat. After 30 seconds to 1 minute, strain though muslin or a fine sieve and cool until required.
