Fish sauce for use in Thai and Laotian recipes

  • 2 fillets of pickled mudfish (sold in jars in Thai grocery stores as pickled gourami)

Method

Combine all ingredients in a saucepan and bring to the boil. Simmer, half covered, for about 30 minutes, or until fish has fallen apart. Strain and reserve.
