  • 400 g (14 oz) daikon (white radish), peeled
  • 1 teaspoon dried crushed chilli

Method

Cut daikon into thick matchsticks about 4 cm (1½ in) long and 1 cm (½ in) thick and toss on a slightly curved plate with chilli, garlic and ginger. Place a small flat plate on top and weigh down with a large can. Leave to sit for 3 to 4 hours before refrigerating.
