France’s most famous omelette was made in Normandy, on Mont St Michel, by Annette Poulard. In fact she was born in Nevers in 1851, became housemaid to the architect in charge of restoring Mont St Michel (it had been used as a prison) and in 1873 married the son of a baker there. At that time railways were bringing visitors in ever larger numbers to the famous sites of France, and the Poulard’s hotel just inside the main gate on th
