Potatoes cooked with leek is the definition of ‘Pommes de Terre à la Normande’. It is an excellent way of using firm, waxy potatoes that have a good flavour. There are two ways - at least - of cooking this dish, which can best be served as a separate course. This is one; Blanquette de Pommes de Terre à la Normande is the other.
