This pretty and unusual starter is a toned-down version of the very sweet Fassi tomato confit. It is quicker to prepare and easier to eat in quantity. Eat with two or three other salads and some flatbread.

Ingredients

  • 2 kg (4 lb 4 oz) plump, juicy tomatoes

Method

  1. Make a cross at the base of each tomato and plunge them into boiling water for 30 seconds. Transfer to cold water. Drain and remove the loosened skins. Cut in half and remove the seeds.
  2. Put the olive oil, cinnamon and sugar in large pan, mix, then add the tomatoes. Cook for 15–20 minutes over a low heat, stirring continuously until the mixture is reduced and ca
