Sumptuous, harmonious and with a melt-in-the-mouth quality, the seven-vegetable couscous made in Latifa’s household is one of the best you will ever eat. The vegetables must be carefully monitored so they are neither soggy nor crunchy. One of her secrets is homemade smen (clarified butter), which keeps the couscous grain moist and full of flavour. Salted butter is a good alternative.
