If you can get hold of some quinces, this k’dra makes an unusual dish and its combination of fruit and meat provides a perfect harmony of textures. If quinces are unavailable, replace them with pears, which can be caramelized a little before adding them to the sauce by frying them in a pan with a large knob of butter and a tablespoonful of sugar.
