Lentils have a delightfully earthy flavour and harmonize easily with tomatoes and paprika. For extra bite, add crushed chilli pepper, to taste.

Ingredients

  • 250 g (9 oz) green or brown lentils
  • 2 large tomatoes, chop

Method

  1. In a saucepan or pressure cooker, boil the lentils in water for about 15 minutes. Drain and replace the water, covering the lentils, then add the tomatoes, onion, sweet paprika, salt and pepper.
  2. Cook for an additional 30 minutes in the saucepan or 15 minutes in the pressure cooker, until the lentils are cooked through.
