Sweet potato with raisins

This typically salty-sweet combination makes an unusual vegetable starter.

Ingredients

  • 2 tbsp vegetable oil
  • 2 large onions, peeled and sliced
  • pinch of salt

Method

  1. Heat the vegetable oil in a saucepan and add the onion, salt, saffron, pepper and water. Bring to the boil, reduce the heat and simmer for 20 minutes.
  2. Add the sweet potatoes and raisins, stir, then cover and cook over a medium heat for about 40 minutes. Garnish with the chopped parsley and serve warm.
