Although Fez is quite a way from the coast, fish figures prominently in its cuisine and fresh sardines are a regular street snack. The fish comes by refrigerated truck from Agadir and Larache daily, so housewives have to take pot luck (literally!). Here, you could use fish such as turbot, sea bream or sea bass. The finished dish looks very fresh and decorative.
