This simple salad is high in vitamins and makes an unusual starter as the sweet honey flavour comes through loud and clear. Dalila sometimes adds finely chopped tomatoes.

Ingredients

  • 500 g (1 lb 2 oz) carrots, trimmed, peeled and grated

Method

  1. In a large bowl, combine the grated carrot with the raisins.
  2. In another bowl, mix together the lemon juice, honey, olive oil, salt and pepper, and stir into the carrot and raisin mixture to coat evenly. Garnish with the chopped parsley.
