The peas dominate the flavour of this stew, and their sheer quantity also monopolize its appearance, with the yellow saffron kicking in behind. If necessary, you can replace the fresh artichoke hearts and peas with canned/bottled or frozen versions. Dalila always smiles when this dish is mentioned and Ahmed seems only too happy to shell mountains of fresh peas in anticipation of the meal to come. It’s a real family dish and perfect on a coo, spring or summer evening.
