Make a cross at the base of each tomato and plunge them into boiling water for 30 seconds. Transfer to cold water. Drain and remove the loosened skins. Chop roughly.
Heat the vegetable oil in a casserole dish and fry the onion over a low heat until soft. Add the beef, cook for 1–2 minutes, stirring continuously, then add the tomatoes and garlic. Cook for a furt
