Ingredients

  • olive oil, for frying
  • 1 onion, peeled and thinly sliced
  • 2 aubergines, trimmed and diced
  • 1

Method

  1. Heat a little oil in a frying pan and lightly fry the onion. Remove from the pan.
  2. Add a little more oil to the frying pan and fry the diced aubergines until lightly browned and cooked through. Add the onion and capers.
  3. Mix together the olive oil and vinegar, then add the harissa, coriander, caraway seeds and salt.
  4. Toss the vegetables and cap
