1 onion, peeled and thinly sliced
2 aubergines, trimmed and diced

- Heat a little oil in a frying pan and lightly fry the onion. Remove from the pan.
- Add a little more oil to the frying pan and fry the diced aubergines until lightly browned and cooked through. Add the onion and capers.
- Mix together the olive oil and vinegar, then add the harissa, coriander, caraway seeds and salt.
