  • 800 g (1 lb 12 oz) waxy potatoes, making about 600

Method

One day in advance

  1. Peel the potatoes and cut into the shape of large corks, paring the sides and cutting off the two ends. With a mandoline cut them into gaufrettes (see note) over a bowl of cold water and soak for 12 hours, changing the water from time to time to remove all trace of starch.
