Grandmum’s Spinach Chicken

My grandmother Barima’s palak chicken brings back memories of summers in Kapurthala, a town in the state of Punjab. Her warm, sunlit kitchen was bright and lively, filled with the aromas of spices and fresh vegetables kept in a pantry with a door with a wire mesh. My sisters and I would sit around the dining table in the kitchen and watch her mesmerized as she would go about preparing each dish with love, her movements so busy and tender, just like her.
