Let’s put it this way: it’s my Punjabi heritage that comes to the rescue when I crave something savoury and crispy to have with my sweet cardamom-infused chai, and it’s almost always these deep-fried chicken pakoras. Growing up, an assortment of pakoras, whether potato, cauliflower, chilli or chicken, were always made for the 4pm teatime, especially if the extended family was expected. We dunked them into spicy tomato ketchup for good measure!
