Ghee Roast Chicken, as the name suggests, contains ghee – but don’t let that stop you in your tracks! Let’s start from the beginning. This dish was invented in the 1970s by the proprietors of the restaurant Shetty Lunch Home situated in the city of Mangaluru, in the southern state of Karnataka. Its popularity can be attributed to the depth of flavour in this semi-dry chicken dish, given the selection of spices that go into it, including cumin, coriander and fennel along with dried chillies
