Mushrooms bring a whole lot of life to a curry. Their spongy texture helps to absorb the flavours of any sauce while their earthy and nutty flavour add versatility to any dish. Throw in an orange and yellow pepper to add a lingering sweetness.
This was a go-to curry in my family kitchen back in Delhi, when it came to vegetarian option for dinner parties thrown by my parents for their friends.
