Add a tablespoon of this to any marinade along with yogurt, lemon juice, ginger and garlic paste or garam masala and see the magic unfold on a barbecue, grill or air fryer. Yields 10 tablespoons.
Put all the spices except the ground nutmeg, ground turmeric, dried mango powder and Kashmiri red chilli powder in a hot, dry pan on a medium heat. Toast for a couple of minutes, stirring frequently. Leave to cool, then grind to a smooth powder in a coffee/spice grinder. Add the remaining ingredients and mix well. Store in an airtight jar away from heat and sunlight.
