Put the salt into a shallow bowl. One at a time, turn the lemon quarters in the salt, coating well, and place in a 1-quart canning jar. You may need to apply some gentle force to get the last few quarters into the jar. Add the salt remaining in the bowl and the lemon juice to the jar. If air bubbles are visible, cover the jar and shake it a little to eliminate them. Uncover the jar, add additio
