  • 2 lb Roma tomatoes (about 8 medium-large tomatoes)
  • ½ large yellow onion, cut into ¼-inch-

Method

Position a rack in the upper third of the oven and preheat the oven to 450°F.

Core the tomatoes, halve lengthwise, and scoop out and discard the seeds. Arrange cut side down on a large sheet pan. Arrange the onion slices, garlic cloves, and fresh chiles (add according to taste)
