In a blender, combine the egg yolk, lemon juice, garlic, anchovies to taste (if using), mustard, Worcestershire sauce, vinegar, salt, and a generous grinding of pepper and blend until smooth. With the blender running, add both oils in a slow, steady stream and blend until emulsified. Taste and adjust with lemon juice and salt if needed.
