A platter of crispy, salty-sweet bacon is a great addition to nearly any breakfast or brunch table. This simple technique will take your bacon to the next level, and no one has to know how easy it is. For an extra kick, sprinkle the bacon with coarsely ground black pepper or Sichuan pepper toward the end of baking.
Arrange the bacon slices in a single layer on a large, rimmed grill pan or a large sheet pan and bake for 15 minutes. Remove the pan from the oven and pour or spoon off the excess fat. Brush the bacon slices evenly with the maple syrup, return the pan to the oven, and continue baking until the bacon is crispy, about 5 minutes longer. Meanwhile, line a large sheet pan with paper towels.
