Named for the fifteenth-century Venetian painter Giovanni Bellini, the true Bellini, which originated in Venice, Italy, in the 1930s, is made with white peach purée and sparkling wine. We’ve re-created this refreshing Italian cocktail because it is enjoyable anywhere. We recommend using peak-season peaches (or even nectarines) and a fruity sparkling wine—perhaps one from Napa Valley.
