No one will ever know that you made this tender, smoky-sweet pulled chicken the day before in a slow cooker. It’s a great way to extend the options for a big family barbecue without standing over the grill all day long (save that for the burgers!). The slaw is optional, but we love the tangy crunch it adds to this hearty sandwich.
Season the chicken all over with salt and pepper. In a large frying pan over high heat, warm the oil. Working in batches, add the chicken and cook, turning once, until browned on both sides, about 3 minutes per side. Transfer to a slow cooker. Add the barbecue sauce and stir to coat evenly. Cover and cook on high until the chicken falls apart into shreds when prodded with a fork, about 2 hours.
