This chilled summer soup from Spain is most often made with tomatoes, as here, but there are many other variations out there—think cucumber, watermelon, and even almond. The beauty of this soup is that you can throw all the ingredients into the blender and voila!—lunch is made. When you have a bounty of overripe tomatoes, substitute 2 pounds fresh for the canned.
