This popular vegetable-packed sandwich has a little bit of everything, culminating in a wonderful combination of flavors and textures. Romesco, which originated in Catalonia Spain, is traditionally a rich, tangy puréed sauce of tomatoes, ñora peppers, garlic, olive oil, bread, vinegar, and almonds and/or hazelnuts. It’s easy to make (our recipe uses jarred red peppers and no tomatoes), but you can also find good ready-made versions.
