The classic pairing of Mexican-style chorizo and potatoes is excellent in these generously loaded breakfast burritos. If you like, add sliced avocado or pico de gallo before you roll up each burrito. To serve a group, double the recipe and assemble the burritos just before everyone arrives, then wrap them in foil, line them up on a sheet pan, and slip the pan into a 200°F oven so they stay warm.
