Stuffed with eggs and plenty of vegetables, this warm breakfast burrito can’t be beat for a casual brunch or an early-morning meal on the go, especially when you need something hearty. We make a few combinations, such as the potatoes, mushrooms, and spinach used here and a summer favorite that includes grilled or sautéed eggplant, bell peppers, and zucchini. Change up these combinations with whatever vegetables you like to create your own ideal vegetable burrito.
