Pineapple, lime, and mint have a natural affinity to one another, so it’s only fitting that we decided to transform them into this delicious mocktail influenced by two popular Caribbean cocktails, the mojito and rum punch. To turn this tropical sipper into a cocktail, add 3–4 ounces white rum to the lime juice mixture.

  • 20 fresh mint leaves, plus 4 sprigs for garnish

Method

Fill 4 highball glasses with ice. In a mixing glass or small pitcher, combine the mint leaves and simple syrup. Using a muddler or pestle, gently muddle the mint leaves, being careful not to tear them. Stir in the lime juice and pineapple juice.
