The sweet spice–laden aroma of apple pie baking is a sure sign of autumn. And these small, round hand pies will not disappoint. Plus, they are the perfect size to pack for a picnic. Make, roll out, cut, and refrigerate the dough the day before baking and these will be a snap to make. If you like, swap out the apples for pears.
In a large sauté pan over medium heat, combine the granulated sugar and water and cook, stirring, until the sugar dissolves. Add the apples, cinnamon, nutmeg, and salt and cook, stirring occasionally, until the apples are just tender and the liquid is slightly thickened, 6–8 minutes. Transfer to a bowl and stir in the lemon juice. Let cool to room temperature.
